Butterfly flower - Clitoria ternatea 30 g
It is called butterfly pea flower or also Blue Tea. Or, less prosaically, the clitoris. As well as turning the water an unexpectedly beautiful shade of turquoise, it contains substances that benefit health in every way. Its remarkable property is its ability to enhance and revive dreams and promote lucid dreaming.

Preparation:
Place 5-7 flowers in a 250 ml cup and cover with hot water.
The infusion and taste of the tea
The blue tea can be recognised at first sight - the clitoria flowers are really blue and give a turquoise infusion when poured over hot water. Its colour varies according to the pH of the liquid; clitoral tea combined with a few drops of lemon, for example, is very dark purple. The taste is described as natural, earthy and woody, similar to some green teas.
Origin of the tea
The most striking part of the clitoria (Clitoria ternatea) is the dark blue flower, which is shaped like the female sex. The plant itself looks like a shrub with dark green elliptical leaves. Clitoria is a perennial herb, its flowers are about 4 centimetres long. The fruits are flat pods that contain 6 to 10 seeds. They can be eaten before they ripen. Clitoria is usually grown as an ornamental plant, interestingly, it is planted where there is a need to improve the soil quality. Its roots provide a symbiotic environment for soil bacteria, which convert nitrogen from the atmosphere into substances usable by the plant. The nitrogen is then returned to the soil as it decomposes.
The claryophyllum has its natural habitat in most countries in Southeast Asia, which is why it has acquired a number of names there. In Thailand and Vietnam, for example, clitoris tea is available as nam dok anchan. It is mixed with mint, honey and lemon and is used as a soothing and relaxing drink for the evening. It is often served in spas and wellness centres.
In its native habitat, the blue flowers are used as a dye. Malay cuisine works with the extract to colour sticky rice. In Thailand they make blue syrup, in Burma they coat the flowers in batter and fry them.
The clitoris flower, which is processed by careful drying, contains mainly flavonoids involved in a number of healing processes in the body. The tea can be consumed hot or iced. Its colour changes when combined with, for example, lemon or hibiscus are popular. Punch bowls or cocktails are popular. Tea frozen in ice cubes slowly dissolves and changes the colour of the drink.
